Chicken
in wine sauce

     1 whole chicken
     1/4 cup olive oil
     1 medium Onion chopped
     1 1/2 cup Burgandy wine
     3/4 tsp. oregano
     3/4 tsp sweet basil
     2 cans tomatoes ( squished ) not Tomato sauce
     3/4 to 1 cup fresh mushrooms

     Roll chicken peices in flour and brown on both sides
     in olive oil add onions when chicken is turned to brown
     other side.  When chicken is done.
     Turn heat to high and add 1 1/4 cups wine and mushrooms and cover.
     Reduce heat and simmer for 15 minutes.
     Add tomatoes and remaining ingredients.
    Cook for 2 hours over medium-low heat.

    Serve over rice or Spaghetti
    *if sauce is to thick add 1/4 cup more wine before serving
